Seriously Scrumptious Pot Stickers

A few weeks ago I learned how to make these pot stickers. I seriously couldn't get enough of them, they were sooo delicious! My favorite is the traditional recipe but we had no problem getting everyone to eat everything we made. With 12 of us, we ended using 3 whole packages of wonton wrappers and couldn't get them out of the pan fast enough. Needless to say, they were very popular (not of my doing, I just learned how to make them). I think I'm going to try making these bad boys for my family when I'm home for Christmas.

Traditional Recipe
· 4 Cups Napa Cabbage finely chopped (squeeze out all excess liquid)
· 1 ½ tsp Kosher Salt; & ¼ tsp
· 2/3 lbs Pork
· 2 Tbsp Ginger (minced)
· 4 Tbsp Shredded Carrot
· ½ C Scallions
· 3 Garlic Cloves (minced)
· 2 Tbsp Soy
· 2 tsp Sesame Oil
· 1 Egg Beaten
· ½ tsp Black Pepper

Alternate Recipe
· 1 lb Pork
· ½ C Scallions
· 4 Tbsp Red Bell Pepper
· 2 Eggs lightly beaten
· 4 tsp Ketchup
· 2 tsp Mustard
· 4 tsp Worcestershire Sauce
· 2 tsp Brown Sugar
· 1 ½ tsp Kosher Salt
· 1 tsp Black Pepper
· ½ tsp Cayenne Pepper

Hot Dipping Sauce
· 3 Tbsp light soy
· 3 Tbsp dark soy
· 3 Tbsp red or rice vinegar
· 1 tsp chili oil
· ½ tsp sugar
· 1 clove garlic (minced)
· 1 tsp ginger (minced)

Mild Dipping Sauce
· 4 Tbsp Soy
· 1 tsp Sesame Oil
· 1 Tbsp Rice Vinegar
· 2 tsp Ginger
· 2 tsp Green Onions

Put a small amount of the meat filling in a wonton wrapper and then seal the edges with water. You can make little fluted designs to make it pretty if you are worried about appearance.

Heat a non-Teflon coated pan (non-stick works too, just not as well) on medium to med high
Add a skiff of oil to the pan and spread around - oil should be hot enough to sizzle when dropped with water
Place filled wonton wrappers in the pan with edges not touching but filling the pan
Let cook for 5 min without the lid on
Add about 1/3 C chicken or veggie broth
Turn on low and let cook with lid on pan for 5 min
Remove lid, most of the liquid should be gone, and let rest of liquid (if any) cook off
Gently shake pan to loosen the pot stickers

Clean the pan in between batches with water and high heat – let boil for one min then dump out water and wipe pan with paper towel
