Mexican Cooking in Minnesota

Seriously, I think I might have been spoiled living in AZ for 6 years and living on the Mexico border. For the most part that meant half decent Mexican food even if I usually said I couldn't find anything decent unless I went into ghetto Mesa or around little Mexico (AKA Guadalupe).

I had some tortillas just hanging out in my fridge and I haven't seen any type of Mexican restaurant that I want to try here in MN, so I decided to make some Enchiladas a la Natalie. I had a hard time finding basic ingredients in the store! Maybe I just live in a white area, but for real, I couldn't even find a can of enchilada sauce... red or green. But... in a compromise, they did have a packet of dry powder where you can make your own sauce so I thought I would try it.

COOKERS BEWARE! DO NOT USE POWDER PACKETS!

The enchiladas are edible, but the sauce does not taste at all like it should. So disappointing :(

That is so sad! Mexican food is the best and if you can't even make it yourself...you might have to move somewhere else! Love ya!!
